Hey guys I'm
Alejandra and I'm Caroline and today we're making Spicy Peanut Butter
Cornbread. So this is the perfect Thanksgiving side dish because its kind of
classic but its got alittle bit of a twist.
Gonna start out by just doing kind of a basic cornbread mix. Got some
ground ground cornmeal in here, some flour, some sugar because this is one of
thosesweet northern cornbreads.
Haha. Get that whisked in. Then we've got a little bit ofbaking powder,
baking soda, and very important, a little touch of salt. And get that all mixedup until its pretty
even. I see you have some wet
ingredients here can i start on thosetoo? Yes, you can. So we've got two eggs, whisked up a little
bit. Whisk! Haha. Whiskthem up.
And I'm going to add a little bit of honey. Ok.
Just a little extra sweetness. Some buttermilk. So if you don't have buttermilk what would
you use in your kitchen? You cando some yogurt.
Not the thick Greek yogurt but the plain regular yogurt or some milkwith
about, about a cup of milk with a tablespoon of lemon juice or vinegar in it
just to giveit that little bit of acidity.
I see also that you added olive oil, what was the thinkingbehind that?
Well its just sort of a nice savory dish and the olive oil just kind ofgives it
a little extra depth of flavor. It's
pretty good. Perfect. And this can go intomy dry ingredients. Get that all in there. Mix that together. And just pretty simple,I don't need a mixer
or anything. I kind of just get it all
combined. Yea. It's nice andeasy. It seems like a last minute thing before
rushing out for a holiday meal. Just
throwit together, bring it along. It's
great. Exactly. There we go.
Perfect so see how it's a nicekind of smooth batter. So now I'm actually going to portion out some
of this to yourlittle bowl here.
Mmk. Um and just want to put a
little portion here. And this is thepart
that I'm going to mix up with the peanut butter. That's why I'm setting that aside. Can I snag
this peanut butter for you? Yes, please.
I see you've chosen The Heat Is Onpeanut butter. The Heat Is On! Nice. That's right because we're adding some spice
to this. So just kind of do a big ol heaping scoop of that in there. Ok.
Even more than that. A little bit more? Alright. I like a little extra heat. Nice get that all in there. Anda little more buttermilk just to kind of
thin it out because the peanut butter can be thickso we want a nice smooth
peanut butter portion. What's great is
I'm going to actually swirlthis peanut butter batter into the regular batter
and it's going to bake up so you geta little bit of a sweet, a little bit of
spicy, nice blend of flavors. I see we
have a preparedhere. Yess. So just a little parchment paper in the
pan. Make it easier to get the
cornbreadout later. Oh yea i love
it. So you can just lift and go. Exactly.
Nice. So lets get thisin there. Alright.
You wanna scoop that in? Sure.
Just all of it? Yes all of it in.
Justsort of spread it out nicely.
I'm just going to follow it up with this. Perfect.
Just goingto spread it out.
Fabulous. Get it to the edges
there. It looks though but its goingto
rise once its done baking. And I'm just
going to put little bits of this around thebatter. It smells so good. It smells kind of hot. Haha.
Yea you can smell those sortof chilies and great spices of The Heat Is
On. I'm just swirling right now. Just usea knife or a toothpick, back of
spoon, whatever you got. Swirl that
spicy batter in here. So this is awesome.
Looks good right. Looks
gorgeous. So this is all ready to go
intothe oven. So i just pulled this out
of the oven and letting it cool maybe just aboutten, fifteen minutes. Nothing too crazy. You want a nice warm cornbread side. See how easythat comes out, yes looks
gorgeous. It's golden brown, it smells
so good. And then just kindof cut it
into little squares. We can just plate
these up. Lovely, I can't wait to tryit. I can see a little bit of swirl in
there. Nice. Wanna try it? Yes! Haha. Can I do thatnow? Oh good. I have two.
